I have seen people in the past have custom track rides, with different kinds of cars and track pieces, and wondering where I could find some
I know theres one place thats really good and ive seen used a lot, just not sure what theyre called
Anyone know?

I'm not sure I fully understand what you are asking, but I think I may have kind-of-an idea. If I'm wrong, I apologize in advance. But here are my thoughts: (as examples)

thanks Aecrouch, but not exactly what I mean
SimpleFate might know, ive seen in his coaster menu he has a bunch of different coaster types that are like the original, except with different car possibilities and different track pieces possible

DasM has a huge amount, which can be found at the CA Depot site. Great sets. Also, if you can because I cant, the PEP CTRs are great and more customizable. You can find them pretty much by googling "PEP CTR add-on". Another great set of CTRs are from Krypt which you can also find at the CS Depot as well.
