I have Steam and am able to download and get custom scenery in the style-themed folders, but I can't figure where to place custom structures (.dat) files. Can anybody help?

Hi and welcome!
Structures (.dat files) usually are put in Documents/RCT3/Structures on your computer. It might be a little different, (because you use the game with Steam)but I would try this first. If it doesn't work, I would wait for someone else to try and/or offer assistance or contact Steam directly.
