Because that's what the 'don't do X' sentence always does, it makes you do X.

Just like when the doctor says "don't panic" and it makes you panic like crazy, and
Just like you know there's something good to steal when there's a sign in front of a building saying "there's nothing to steal here" and
Just like you'll always be awake when somebody asks you "are you asleep yet"?

It's so hard to turn down an urge. Try saying don't look at me to someone. There's a 90% chance they'll look at you.
