i have seen lots of people with backgrounds (in there sandbox parks) with mountains or buildings.

i have just got boring old fields

does anyone know what i mean?

The other people are in custom scenerio mode. This lets you change anything about your park. In tools on the menu you can go to create custom scenario and you can change every detail in your park right down to the backround.
