Rccoa suggests build. To add to that I’d suggest practice. Try all sorts of things in various sandboxes remembering that not every park you start will end up a masterpiece.
Basing some of your work off real things is a good idea but only you will know if you want the authenticity of a realistic park or would prefer a park that’s fantastic but also somewhat believable.

If the quick link doesn’t work it’s post #12. If you’re having problems with files and downloads there is other information earlier than post #12 in that thread that may be helpful. If you’re planning to use custom stuff.
And like Rccoa says, loads of YouTube videos are available. You can find one on almost any RCT3 related topic.
As far as length of time to build a great park, assuming one spends 10 hours a week at it it could take as little as one month to six months or more. When you’re finished you’ll be very proud of your first park but by the time you get to your fifth you may find yourself revisiting your first park, perhaps to check how you did something before, during which you may ask yourself, “OMG did I build that rubbish!â€
Excellence in RCT3 is progressive and we all get better at it as we go along. All of us were newbies at one time so don’t hesitate to ask questions.
