There is no UNDO button. You can use the recycle-bin option to delete a area or use the rightmouse button for small deletes.

Recently I wanted to try and delete scenery items in the game without having to go to the trash can all the time. I discovered that if you right click I think twice on the item you have it should delete it. I have found it doesn't work all the time. I also have read in the options section where there are short cut keys (keyboard), I think you can change them some how. But I'm not sure how to do that for the delete hotkey you are talking about. I don't know how accurate this is but this is a link I found:
"How to Change Keyboard Shortcuts on "Roller Coaster Tycoon"

You will have to carry something for the rightmouse button, like a bench or a tree. If the you do it without something, it won`t work.
