how do you do this without changing the directory to my documents?

You can't, that's the whole point of the video. And you don't change the directory at all, just reconfigure it.

Can't you do this by making a new folder called MY PICTURES (in caps) in documents? I can remember seeing a video on how to do it somewhere.

No, I don't think it works, it didn't for me anyway.
