I think anti aliasing is good for a little. Too much makes the game look blurry and takes away the sharpness of the images.

I do have it, but every now and then the options keep switching on and off, can anyone explain that?
As in, sometimes there are options to choose from and the next there isn't.

Do you find the options disappear while you're playing a huge busy park and they reappear when you're in a small quiet park?

No, even if it's a big park or a small park, the options are normally there. But then I go to the options again sometime later, there is no Anti-Aliasing options to choose from, weird?

When I have clearly set it to my preferred Level.

I am using Revolutionary Rides's Mine Bender. I plan to use the Temple of Torment sets to build the ride.

Also, Flight to Atlantis asked: "Where are your park guests headed underground at the top left"

They aren't. Its just the queue for a flat ride.
