First of all, its importent to know that RCT3 only looks good with CSO's, that not only counts for coaster.
It also counts for Foliage (trees/bushes/stones) and Buildings.
With this in mind its a bit hard to tell you which CSO's are useful/importent for you and your way with RCT3.
I speak for myself, i currently have more than 7 GB CSO's in the "Style/Themed" Folder and i think i haven't all yet

It isn't necessary to have every single CSO, but sometimes download links/sites are broken down or files are corupted so its good to have the CSO's safe on an external Harddrive as an back-up.
So i think i could choose from ~ 10GB of CSO's, but i never used all cso's together.
Some CSO-Sets are very specific and others are really an must have.
Importent CSO's in my opinion are:

"ShyGuy" all sets -> all his sets are importent for making a good looking Mainstreet or other detailed looking buildings and smoother looking pathways
"StationJimJr" -> all sets, the same like ShyGuy's, all off them are helpfully, beautifully and covers up alot of different themes (Jungle, Vikings, Tropical, Pirates, Zoo, Gardens, Hotels)
His Fencing sets fits 1:1 to shyguys planters set, thats allways good if different sets fits together.
